“These brownies are my ode to American junk food. They’re meant to be eaten after broken hearts, tough days and for when you’re just DONE. They’re totally rich, salty, chocolatey and chunky. An ‘eat-your-feelings’ kind of indulgence.”

Serves: 1-many (depends on how greedy you’re feeling)
60g 70% dark chocolate
150g soft brown sugar
150g caster sugar
1 tsp vanilla extract
75g plain flour
Preheat the oven to 200C/180C fan and grease up an 8 inch baking tray.
Melt the chocolate, oil and butter in a bowl over a pan of simmering water (Bain-Marie). Make sure the bowl doesn’t touch the water in case it burns the chocolate.
When the chocolate mixture is silky smooth, take it off the heat and add the sugars and vanilla extract. Mix really well until the sugars start to dissolve.
Next, add the eggs one by one and stir into the mixture.
Add the flour and stir thoroughly.
Break the pretzels and Oreos into good sized chunks. This is really down to your preference but I like a really chunky texture. Put a cup of chunks to the side and stir the rest into the chocolate mixture.
Pour the mixture onto your baking tray and put the rest of your chunks on top. Press the chunks into the mixture.
Put into the oven and bake for 25 minutes if you want them to be gooey, or 35 minutes for a cake-ier texture (I like mine a little under-baked).
Let them cool a little before cutting.
Grab a big piece of brownie, a large scoop of ice cream and put on a good movie after a long day.
