“Lately I’ve been craving those Hobnobs, but do you know my issue with those knobbly biscuits? Too dry. So, in a (fleeting) moment of genius I came up with my Flapjack Blondies. They’re the perfect blend of squishy blondie and oaty flapjack. In fact, I had the make these three times to get the recipe just perfect. It was no hardship, so even if these go wrong… they’re great!”

Serves: 9 brownies
200g Unsalted Butter
100g Caster Sugar
100g Soft Brown Sugar
200g Plain Flour
A pinch of salt.
Tsp Vanilla Extract
100g dark chocolate chips
2 small eggs
Preheat the oven to 200C/180C fan. Grease and line an 8 inch square tin.
Cream the butter and sugars together until combined.
Sift in the flour and add the salt and mix.
Add the vanilla extract and oats and mix thoroughly.
Finally add the chocolate chips and eggs at once. Mix again and the mixture should be spoon able but not pourable.
Spoon the mixture into your tin and bake for 20-25 minutes until a knife comes out clean.
Eat one while still warm and another when they’ve cooled…and another later, just because.
