4 garlic cloves, crushed
25g Parmesan, grated
1 ciabatta loaf
Small bunch of parsley, chopped
Preheat the oven to 200C/180C Fan.
Mix the butter, parsley and garlic together in a bowl. Take the Ciabatta make deep horizontal slices along the length of the loaf. With a teaspoon, fill each slice with some of the garlic butter until it’s all gone. Slice the mozzarella into as many discs as there are slices, and tuck one into each. Drizzle the top of the ciabatta with olive oil and sprinkle with the grated Parmesan.
Cook the ciabatta on a non-stick tray for 20 minutes. When you take it out of the oven the top should be golden brown and each slice should ooze with stringy mozzarella.
